There are plenty of hotly contested debates for grillers — charcoal vs. gas, seasonal vs. year-round, one burger flip vs. two. but there is one thing they usually find in common and that’s their love of the art.
Folsom resident Bob Quinlan has been busy as the co-organizer of the upcoming Woz Cup, the tournament of International Segway Polo happening June 16-19 at Prairie City Stadium at Folsom High School. When he’s not on his Segway practicing for the games, he’s often at his grill.
“I’ve had all three kinds of barbecues at our home — charcoal, natural gas and now propane,” Quinlan said. “Charcoal was definitely more of an art.”
Quinlan eventually found the ease of gas too much to resist.
“When we purchased our new home, it had natural gas, which I didn’t think I’d like,” he said. “But the convenience factor conquered my apprehension. We converted to a propane grill due to getting a larger, six-burner Char-Broil grill. the portability comes in handy such as when I was able to offer it for a barbecue at Folsom Lake High School (last) week.”
Quinlan said he enjoys spending time at the grill.
“I enjoy grilling because I love to contribute — though my wife is a much better cook,” he said. “I truly like the taste and texture of barbecued meat and vegetables, and there aren’t as many dishes for me to do after the meal.”
For Quinlan, grilling is a regular activity and not one bound by a date on a calendar.
“I grill year-round,” he said. “Once, while staying at a condo in Hawaii, I grilled in a torrential downpour. it still makes us both laugh when we think about it.”
He’s fired up the grill to cook for dozens of people at a time.
“We’ve had parties where I’ve grilled for over 100 people,” he said. “For my 50th birthday, my son-in-law grilled for over 200 hundred people at our home. That’s why we got a bigger grill.”
Quinlan has a few tips:
Thick meat: “When cooking meat, especially something thick like tri-tip, it’s good to set the meat out at room temperature for at least 30 minutes before cooking. I only season it with garlic salt and coarsely ground pepper, so that we can enjoy both the taste and the texture.”
Kabobs: “A fun hint for shish-kabob is to marinate the meat in teriyaki sauce in a lasagna-style pan or Tupperware by putting it in the freezer over-night. In the morning, pull it out to thaw and let the expanding meat soak up the sauce like a sponge. the flavor goes throughout the meat rather than just on the surface.”
He’s a Weber guy — one charcoal and one gas.
“I use both,” he said, but has strong opinions about which produces the best flavor. “There is no doubt in my mind that the flavor is better over wood or charcoal. unfortunately, all of our daily lives (are all about) convenience, so people usually go for gas.”
While many married couples call each other to coordinate dinner plans, Piccardo said his wife’s question is usually, “What are we grilling tonight?”
While some are known to cart their grill out from the garage only on special occasions or holidays, Piccardo fancies himself a frequent griller.
“I’m probably a year-round griller,” he said. “Even when it’s cold out, we’ll grill up some steaks or chicken.”
Piccardo said people shouldn’t forget about their grill when it comes to more traditional holiday dishes.
“One Thanksgiving, I cooked the actual turkey on the (charcoal) Weber for about four hours with indirect heat with some hickory wood chips. it gave us some great hickory smoke flavor,” he said. “The turkey was brined and it was juicy and the meat just fell off the bone.”
What’s the draw for Piccardo and others who enjoy standing over a hot grill during the heat of summer?
“I certainly enjoy grilling, like the rest of them,” he said. “The wife and I like to cook and it’s one of our pastimes. Grilling outside in the spring and summer is always fun. We entertain neighbors, friend and family and when you have an inviting backyard, like we do, it’s just that much better.”
Piccardo enjoys charcoal but likes to give his grilling something special.
“My family is from Amador County and like to use real oak chips from the family cattle ranch in Ione,” he said. “We cut wood and use the real wood chips. not everyone has that option.”
He said he often grills everything for a complete meal.
“I grill all kinds of meats - beef, pork and chicken. We also grill vegetables as well.”
He’s quick to point out that he isn’t a trained chef, but just someone who loves to cook.
“Once you’ve made a commitment to barbecue something, you have to stay focused because the flames will take over the grill,” Piccardo said.
He said his favorite dish is of the feathered variety.
“My favorite is probably grilled duck,” he said. “Not a whole duck, but a filleted duck, marinated, served medium rare. I also like tri-tip and rib eye steak.”
He has a few tips for those just starting out:
Extra flavor: “Heat and grill a lemon, which extracts the oils and more juices, which extracts more the juices.”
Artichokes: “Parboil artichokes, clean them out and halve them, and with a little olive oil, salt and pepper, they’re great.”
Asparagus: “Take asparagus, marinate them in Italian dressing, and add lemon. You’ll be a hero.”
Sauces and marinades: “I’m definitely a sauce and marinating guy to enhance the flavor. of course, a little olive oil and salt and pepper can make a rib eye taste pretty good.”

1. A clean slate. start with a clean grill, preheat on high.
2. Avoid stick-factor. Lightly oil food before putting it on the grill. this helps searing and stops sticking.
3. Grills like tall guys. before grilling, season food from chest height for even coverage.
4. Some like it hot. High, direct heat from the grill sears the surface of the food to seal in its flavor and juiciness.
5. Don’t fork it up. Use tongs or a spatula to flip food on the grill instead of forks, which can damage the food and allow juices to escape.
6. Keep your eyebrows. make sure the lid stays on the grill most of the time to help regulate the temperature and prevent flare ups.
7. Tame flames not flavor. Keep a spray bottle of water handy to tame any flare-ups that result from fat dripping into the flames.
8. Taste in numbers. Grill for 60 percent of the time on the first side, then flip food and grill 40 percent more. this is known as the 60/40 rule.
9. Safety first, dinner second. Raw and cooked meats should never share the same plate.
10. the 5-minute rule. Allowing food to “rest” for 5 minutes between cooking and eating.
